While we are blessed with abundance of summer, fragrant tomatoes, I try to capture the flavor of summer in them for winter! The tomatoes aroma will invigorate everything from soup to any pasta or sandwich.  You may enjoy them straight from the oven, or freeze them for the long winter months.

Ingredients

  • 10 tomatoes, cut in half
  • 2 Tbs. of olive oil
  • 2 cloves garlic, minced
  • ½ – 1 tsp. dried oregano
  • ½ tsp. sugar (optional)

Preparation

Preheat oven to 300 degree, line baking sheet with parchment paper

Place tomatoes cut side up, and drizzle with oil

Roast tomatoes for 1 hour

Sprinkle with minced garlic, oregano, and sugar (if using)

Continue to roast for 1 – 1½ more hours, until tomatoes are caramelized and brown on edges.
